I reckon that it looks very much like a Nobbi Dragon.

According to my reptile book nobbi is inland and Jacky (murictus) is coastal, main difference is scale size and inside of mouth colour.

I'm confident that this is a Jacky Dragon due to the strongly heterogeneous dorsal body scalation, whereas the Nobbi has fairly homogeneous dorsal scales.
Also the natural range of the Nobbi doesn't include the South Coast of NSW.
