I’m guessing this may be one of the species that consumes an insect underground? It was approx 150-200mm in height.

Yes this looks like what used to be called Cordyceps gunnii. This species was renamed Drechmeria gunnii in 2015. This specimen is atypical because of the partial coating of white which is a species of parasitic fungus possibly a Hypomyces
